According to the judges, a good hummus must have a ‘smooth, creamy, velvety texture’ with ‘no lumps’, an excellent balance between ingredients and a ‘nutty profile with citrus highlights’.

For a traditional hummus, the experts said consumers should ‘predominantly’ by tasting chickpeas, tahini and lemon juice – and ‘not getting a huge hit of garlic’.

‘Interestingly, only about half the products we tested contain lemon juice, and all but a couple contain garlic,’ the judges said.

During the test, the experts noticed some of the dips that didn’t rate well tasted either sweet, ‘very acidic’, contained ‘fishy flavour overtones’, or had a bitter aftertaste.o
